Mocha Loaf

All of you blog readers who have a bread machine or 'MAP' at home should try to consider this Mocha loaf. The recipe from Sonia Allison's 'The complete bread machine cookbook' caught my eye as the ingredients looked like an interesting combination. Think chocolate, coffee, a dollop of nutella, a dollop of butter and milk. Doesn't it sound oouuhh-aaahhh already? I just HAD to try it and I wasn't the least deceived.

When I heard the beep of the bread machine, I lifted its lid & I was nearly screamed my head off! It was the 1st time my loaf, (especially for a 1st trial) reached such a height- a 17cm Mocha loaf, can you imagine that!!! Here's a picture to prove it!

As the Sonia writes: "It's an irresistible cross between a loaf & a cake, the coffee and chocolate intertwined in the background, the sweetness light. It makes a kind of French-style breakfast bred, a chocolate croissant substitute, and may be eaten plain or butterred and topped with soft cream cheese." All has been said & is true; I enjoyed mine with some authentic English honey. The loaf is very soft & fluffy, more or less like a brioche; it's aromatic & the light flavour of chocolate & coffee.I added some bread improver to improve the texture of the loaf. I assure you, it's pure decadent pleasure. There's nothing more to say. Ingredients
  • 300ml water
  • 25g butter (instead of 1tbs oil)
  • 450g plain flour
  • 3tbsp cocoa powder
  • 2tbsp instant coffee granules
  • 1 1/2tsp salt
  • 3tbsp light brown sugar
  • 1tbsp nutella
  • 2tbsp whole milk powder
  • 1 1/2tsp dried / instant yeast
  • 1 1/2 tsp bread improver
  • Procedure

    1. Put the instant yeast first in the breadmaker bucket. Pour the flour over the yeast. Add the rest of the ingredients, and pour the water gently at last.
    2. Fit the bucket into the breadmaker and set the programme recommended in the manual (I selected the basic white option).
    3. When ready, carefully shake the loaf out of the bucket on to a wire cooling rack and stand the right way up. Leave the loaf for at least 30minutes before cutting.

    I can't live without my bread machine :-) Just wondering, I've never used bread improver before. How does it help and how much do u put in generally per 500g or does it depend on the type of bread? Sorry for all these questions.

    Just like its name, bread improver improves the texture of the bread, hence, it's soft & fluffy texture. For 500g I'd put 1 1/2-2tsp. I've used the same amount for any type of bread.
